Description

A delicious, light but tasty salad. Low on carbs, high on flavour, this salad makes for a great dinner.

Ingredients

  • 1-⅞ ounces, weight Quinoa
  • 1 clove Garlic
  • 1 dash Paprika
  • 1 dash Chili Powder
  • ¼ whole Cucumber
  • 2 whole Tomatoes
  • ⅓ whole Avocado
  • ¾ ounces, weight Spinach Leaves
  • 1 Tablespoon Olives
  • 1 Tablespoon Goat Cheese
  • 1 teaspoon Lemon Juice
  • 1 Tablespoon Olive Oil, Plus More To Fry Quinoa
  • Salt And Pepper, to taste

Preparation

Put the quinoa in a pan and add 100ml water. Bring to the boil and cook the quinoa for 8 minutes on medium heat.

When the quinoa is cooked and the water has evaporated, add a little olive oil and use a garlic press to press the garlic into the pan. Also add a dash of paprika and chili to the quinoa. Stir and fry for 1 minute.
Turn the heat of and let it sit for a couple of minutes.

Dice the cucumber, tomatoes and avocado. Put all the vegetables in a bowl. Add the olives and goat cheese.

Dress the salad with olive oil, lemon juice, salt and pepper. Add the quinoa and mix together.
