Preheat oven to 400 degrees F. Cut French bread into cubes and toss with olive oil and a pinch of salt. Spread on a baking sheet and toast for 5-8 minutes, or until golden brown.
Meanwhile, toss salad greens, pepperoni, red pepper, mozzarella and salad dressing together in a mixing bowl.
Add the freshly toasted croutons and mix well. Place in a salad bowl and enjoy!
