Serve this scrumptious salad for lunch or supper!
Preheat oven to 425ºF.
Place chicken in a baking dish. Season with salt and pepper, pour in chicken stock. Cover with foil and bake 30 minutes. Remove foil, flip chicken, and bake another 5 minutes, until internal temperature reachers 165ºF and juices run clear. Allow to cool and cut chicken into cubes.
In a bowl, place chicken, oranges, marmalade, onion, yogurt, and bacon. Stir well. You can refrigerate this and serve it cold on a bed of greens, or build a sandwich. Enjoy!
