Yes, I demolished those Easter eggs! It was fun! This is my creation I came up with today when I needed to stay on my good eating plan and get rid of all those Easter eggs. Enjoy!
Boil eggs as usual and discard yolk. I use a potato masher and smash the egg whites in a large bowl. Dice red onion, celery, and apple and add to the egg whites. Then, measure out and add Dijonnaise (use more or less if you like it drier or creamier). Salt and pepper to taste.
