Description

This is a super crunchy salad that is refreshing and loaded with flavor. Serve it with tacos to make a meal or place a scoop of seasoned taco meat over the top for a hearty main dish.

Ingredients

  • FOR THE SALAD:
  • 2-½ cups Chopped Romaine Lettuce
  • ¾ cups Chopped Seeded Tomato
  • ¾ cups Chopped Peeled Jicama
  • 1 can (15.5 Oz. Can) Black Beans, Rinsed And Drained
  • ¾ cups Fresh Corn Kernels, Uncooked (or Frozen Or Canned)
  • ¾ cups Thinly Sliced Organic Radishes (organic Are Much Tastier And Spicier)
  • 1  Ripe Avocado, Diced
  • 1  Red Bell Pepper, chopped
  • ¼ cups Crumbled Reduced-fat Feta Cheese
  • FOR THE DRESSING:
  • ¼ cups Fresh Lime Juice
  • ¼ cups Olive Oil
  • 1 Tablespoon Honey
  • 2 Tablespoons Finely Chopped Cilantro
  • 1 clove Garlic, Peeled And Minced
  • 1 teaspoon Chopped Jalapeno Pepper, Or To Taste

Preparation

Toss all salad ingredients in a large bowl.

In separate bowl, mix dressing ingredients. Pour dressing over mixture and toss again.

Season with salt and pepper to taste.

Delicious! I left out the feta, and served it inside tacos with the meat. YUM!

This was fantastic! I wasn’t so sure my husband would go for something with so many veggies, but he was literally shoveling the salad from his plate into his mouth! We topped the salad with lean taco meat to make a more “complete” meal.

Yum! We loved this! I didn’t have the feta cheese, so we had to add a little salt to the salad, and then it was perfect. I served it with a green chile chicken casserole, and they went great together. Thank you so much for the great recipe!
