Description

A fresh, crisp salad filled with Mediterranean flavors like sun-dried tomatoes, Kalamata olives, feta, and a lemon-Dijon vinaigrette. Perfect as a side at picnics, potlucks, or for lunch at work!

Ingredients

  • FOR THE SALAD:
  • 3 bunches Broccoli, Stems And Flourettes Sliced Thinly
  • ½ cups Feta Cheese, Cubed Or Crumbled
  • ½ cups Sun-dried Tomatoes, Thinly Sliced
  • ½ whole Red Onion
  • ¼ cups Basil, Thinly Sliced
  • FOR THE DRESSING:
  • 1 whole Lemon, Juice And Zest
  • 2 Tablespoons Dijon Mustart
  • 2 Tablespoons Red Wine Vinegar
  • 1 clove Garlic, Finely Chopped
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • ¼ teaspoons Oregano
  • 1 teaspoon Honey
  • ¼ cups Olive Oil

Preparation

Combine salad ingredients in a bowl; set aside.

Add dressing ingredients to a small jar or glass measuring cup and whisk to combine. Pour dressing over salad, and toss to combine.

Salad can be made up to 5 days in advance, though broccoli will begin to soften after 2 days.
