Description

Egg salad made lighter.

Ingredients

  • 8 whole Hard Boiled Eggs
  • 4 teaspoons Reduced Fat Mayonnaise
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Yellow Mustard
  • ¼ cups White Onions, Chopped
  • 2 Tablespoons Pickled Relish
  • 2 Tablespoons Flat-leaf Parsley, Chopped
  • ¼ teaspoons Paprika
  • Salt And Pepper, to taste

Preparation

Dice 4 whole hard boiled eggs and 4 hard boiled egg whites and put them into a small bowl. Add the mayonnaise and mustards and stir with a fork, mashing somewhat until you reach your desired consistency. Stir in onions, relish, parsley and season with paprika, salt and pepper.

Store in an airtight container and refrigerate.
