A quick, five-ingredient ‘egg salad’, no mayonnaise needed, great to throw together for lunch on a hot day or just when you’re not feeling up to cooking.
This is the easiest food I have ever made.
Cut up your hard-boiled eggs, add to a bowl.
Cut up pickles, celery, green onion, add to the bowl.
Add parmesan cheese.
Add pepper to taste. You don’t need salt; there’s plenty of salt-taste in the pickles and parmesan cheese.
Mix together.
Done!
You can eat this by itself; it’s got plenty of flavor. Otherwise, it makes an incredible sandwich spread and tastes really good in a tortilla as well.
Feel free to add mayo if you’re a mayonnaise person. My husband won’t eat anything with mayo on it, so I have to compromise! If we had mayo in the house, I would have sneaked a little into mine.

just made this last night! I love the texture of this. I found it to be very onion strong though. I will minimize the onion next time, will try again though for sure.

Ooh, you know what, I bet alfredo sauce would work really well in this recipe, since it’s already got the parmesan in it and the eggs and pickles are most of the flavor… hmmn, that is a good idea. Thanks!

Ooooo, this looks yummy! My husband can’t eat mayo either (food allergy) and I bet he’d like this.
By the way, as a mayonnaise substitute in some things, try using a jarred alfredo sauce; it’s thinner than mayo, but depending on the other ingredients it can work nicely as a binder, providing the flavor doesn’t interfere. This recipe looks like a good candidate to try that with!
