Description

This salad is simple yet complex. It has a variety of flavors, but it’s easy to make. It makes a lot and stores well, so I usually make it at the beginning of the week and use it for lunches throughout the week. You can alter the ingredients to suit your own taste or to match what you already have.

Ingredients

  • 6 cups Chicken Breasts, Cooked And Diced
  • 2 packages Tri-color Rotini Pasta
  • 2 cans Pineapple
  • 4 cups Red Apples, Chopped
  • 2 cups Red Grapes
  • 2 cups Green Grapes
  • 4 cups Celery, Diced
  • 4 whole Green Onions, Chopped
  • 1 can Cashews (any Nut Works)
  • 1 bottle Cole Slaw Dressing
  • 1 cup Mayonnaise

Preparation

Cook and dice chicken. Cook and drain pasta. Drain pineapple, keep juice. Chop apples and soak in pineapple juice. Dice celery and green onions. Mix cole slaw dressing and mayonnaise. Now combine and mix all ingredients in a large mixing bowl. Chill. Enjoy!
