Description

This is a light version of the rather heavy 1000 Island dressing. I lightened it up with a mix of vegan mayo and Greek non-fat yogurt. I also reduced the sugar and sodium by using my homemade ketchup and less salt. With minced red bell pepper and the cucumber relish, it’s just very fresh! Serve with crisp lettuce (e.g. iceberg), tomatoes, cucumbers and other raw veggies, or with a seafood salad or smoked salmon.

Ingredients

  • ¼ cups Eggless Vegan Light Canola Mayo
  • ¼ cups Greek Plain Non-fat Yoghurt
  • 1 Tablespoon Milk (2%)
  • 1 Tablespoon Water
  • 2 Tablespoons Ketchup (preferably Homemade, Else A Low-sugar Ketchup E.g. Heinz ‘reduced Sugar’)
  • 2 teaspoons Worcestershire Sauce
  • 1 Tablespoon Minced Onion
  • 1 dash Each Of Salt And Cayenne Pepper, Or To Taste
  • 1  Lemon, Juiced
  • 2 Tablespoons Minced Red Bell Pepper (2 Tablespoons Is About ¼ Bell Pepper)
  • 2 Tablespoons Cucumber Relish (preferably Homemade)

Preparation

In a small food processor or mixer, blend everything (except the red bell pepper and cucumber relish) until smooth. Add the bell peppers and the relish and mix one more time.

Serve with crisp lettuce (e.g. iceberg), tomatoes, cucumbers and other raw veggies, or in a seafood salad or smoked salmon.
