My co-workers request Gut Salad for our Christmas potluck every year. When presented plainly in a serving bowl, and spooned out, it looks a bit like guts (or what we imagine guts would look like!) But dressed with fresh oranges slices and a few fresh cranberries on top, it would be lovely for a holiday meal. The pecans, pineapple and oranges add something special to the cranberry salad. Hope you enjoy it!
Pour the boiling water on the gelatin in a medium bowl; stir until gelatin is dissolved. Stir in the remaining ingredients.
Pour mixture into a serving bowl. Cover and refrigerate at least 8 hours, or until firm. Garnish with cranberries and thin orange slices, if desired.
