Description

Why not have your salad on your bread? Greek Salad Pizza lets you have a yuumy veggie salad on a pizza crust flavored with oregano and lemon zest.

Ingredients

  • 1  Medium Cucumber, Seeded And Diced
  • 1  Green Pepper, Seeded And Diced
  • 1  Red Onion, Diced
  • 4  Plum Tomatoes, Seeded And Diced
  • ½ cups Feta Cheese, Crumbled
  • ½ cups Kalamata Olives, Chopped
  • 1 Tablespoon Dried Oregano (or 2 Tablespoons Fresh)
  • 1 whole Lemon, Juiced
  • 3 Tablespoons Extra Virgin Olive Oil
  • ½ teaspoons Pepper
  • 1 whole Pizza Dough, Homemade, Substitute Zest Of 1 Lemon For Garlic
  • 4 cups Mixed Baby Salad Greens
  • 1 pound Chicken, Grilled And Sliced

Preparation

In a medium bowl, combine cucumber, green pepper, red onion, tomatoes, feta, olives, oregano, lemon juice, extra virgin olive oil, and pepper. Toss well to combine and set aside.

Preheat a grill pan on medium-high heat. Divide dough into sixths and press out into 8″ circles. Grill for 3-4 minutes per side until crust is crispy and it has nice grill marks.

To serve, cut each round of dough into 6-8 pieces with a pizza cutter. Place on a large plate. Top with some salad greens. Place about 1 cup of the veggie salad on the greens. Top with a portion of the chicken.
