Description

Crispy, crunchy, and loaded with flavor…and feta!

Ingredients

  • 1 head Romaine Lettuce, Chopped
  • 4 whole Ripe Tomatoes, Cut Into Six Wedges Each, Then Each Wedge Cut In Half
  • 1 whole (large) Cucumber, Peeled, Cut Into Fourths Lengthwise, And Diced Into Large Chunks
  • ½ whole Red Onion, Sliced Very Thin
  • 30 whole Pitted Kalamata Olives, Cut In Half Lengthwise
  • 6 ounces, weight Crumbled Feta Cheese
  • Fresh Parsley, Roughly Chopped
  • ¼ cups Olive Oil
  • 2 Tablespoons Red Wine Vinegar
  • 1 teaspoon Sugar (more To Taste)
  • 1 clove Garlic, Minced
  • 6 whole Kalamata Olives (extra), Chopped Fine
  • ¼ teaspoons Salt
  • Freshly Ground Black Pepper
  • 1 whole Lemon, For Squeezing

Preparation

Add chopped lettuce, tomato wedges, cucumber chunks, onion slices, halved Kalamata olives, half the feta, and parsley to a large bowl.

Combine olive oil, vinegar, sugar, garlic, salt, pepper, and chopped olives in a bowl. Whisk together until combined. Taste and adjust seasonings (I almost always add a little sugar.)

Pour dressing over salad ingredients, then add salt and pepper. Toss with tongs or clean hands. Just before serving, top with additional feta and squeeze a little lemon juice over the top.

Took this to a family picnic this evening – and it was just wonderful. Bright and crisp and salty with just a little sweet. I threw the olives in with the dressing in a mini-chopper, and it minced them perfectly. Every bite of salad had at hit of olive so there was no fighting over who got to take the whole ones out of the bowl!

Oh – and don’t forget that spritz of lemon at serving time – it took this salad from good to great.

One more thing – if you’re an herb kind of person, a sprinkle of oregano in the dressing adds another layer of flavor. Not necessary, just interesting

I had planned to make greek salad tonight with chicken gyros and was going to look for a dressing recipe to make. Perfect timing.

Ree – Your salad sounds delicious, but I just gotta insist you try my version of Greek Dressing on top!! There’s no vinegar (just lemon juice instead for the acid), oregano, and LOTS of garlic. You will not be dissapointed…it always gets RAVE reviews!!! It’s in my recipe box here on TK – check it out! :-)

This is a great Greek salad recipe. I’ve worked for a Greek restaurant owner for 25 years and this is one of the best dressing I’ve had!! Lemon juice is a great on top!!
