We call this a salad, but it’s almost like a dessert. We serve it at Thanksgiving, and my daughter skips the turkey and heads straight for the Rosy Fruit Salad.
Cook frozen rhubarb with water and sugar until soft and separating. Add Jello to hot rhubarb and stir to dissolve. Add orange juice and rind.
Chill till slightly thickened and then add strawberries. Chill till set.
