A great summer salad!
Preheat oven to 375ºF. Brush cicken with olive oil and sprinkle with salt and pepper. Cook 30 minutes or until juices run clear. Cool and dice.
Mix all ingredients. Refrigerate. Serve as a sandwich or on top of a bed of spinach.
Tip: To cut the time in half, you can easily use a rotisserie chicken!
