Description

A light, refreshing noodle salad that’s sure to allure you back for seconds.

Ingredients

  • 1 package (about 14.4 Oz.) Bean Thread Noodles
  • 1 whole Carrot, Finely Sliced
  • 1 whole Cucumber, Finely Sliced
  • 3 whole Green Onions, Finely Sliced
  • 1 cup Cabbage, Finely Sliced
  • 1 cup Cilantro
  • ½ cups Peanuts
  • _____
  • FOR THE DRESSING:
  • 2 Tablespoons Sweet Chili Sauce
  • 2 Tablespoons Fish Sauce
  • 1 whole Lime, Juiced

Preparation

Cook noodles according to package. Combine the dressing ingredients and stir well. Assemble noodle salad with desired vegetables. Pour sauce over and serve.

Note: you could also serve this with chicken, tofu, or shrimp. Mix up the vegetables you use—bean sprouts, mint, red pepper.

I added shrimp. I fried the shrimp up in a little sesame oil before tossing it all together. It was delicious!

Very fresh and healthy salad with a kicky dressing. For the noodles I soaked them in cold water til soft, then boiling water for 5 minutes until transparent, then drained and rinsed with cold water.
