A tweaked layered Jello recipe turned out to be a hit at our 4th of July barbecue! The more layers the merrier!!
Disclaimer!!!
The 5 hours of prep time is mostly fridge time for the jello to set up. So you’ll have lots of time for other kitchen projects. Or kicking back with a bag of potato chips! Waiting has never been so easy!
Bring a big pot of water to a boil.
Mix first box of lime Jello with 3/4 cup boiling water and stir until combined. (Using 1 full cup boiling water is fine too, I find that it sets quicker with less water, though, and is less fragile in the long run). Then mix in 1/2 cup cold water and stir.
Pour into the bottom of a 9×13 nonstick baking dish (or “brownie” dish as I like to call it) and pop into the fridge on an even surface.
While that sets up, mix the second box of lime Jello with 3/4 cup boiling water until combined. Then add 3/4 cup evaporated milk and stir again.
Once the first layer of Jello has that signature wiggle, you can pour on the second layer. Then place in the fridge, on an even surface, to chill.
Continue this process with the other 3 flavors (mix the first box with cold water, the second with evaporated milk, as I did above) and you will have a groovy 8-layer rainbow dessert!
I like to slice it into bite-sized squares and serve on a big platter with a big spoon so they don’t break on their way to your plate! ENJOY!!
