A creamy rice salad with a kick from curry powder. Great as a main dish or a side dish. The shrimp in this is optional.
In a small bowl, whisk together onion, mayonnaise, French dressing, curry powder, dry mustard and hot sauce. Add salt to taste.
In a large bowl, place hot rice, peas, celery, pimento and shrimp if used. Pour mayonnaise mixture over and toss to combine.
Refrigerate for at least 2 hours before serving.
