A light and bright spring-friendly salad!
Season shrimp with lemon pepper and salt. Sauté for 3-4 minutes on medium low heat until cooked through. Let cool
Use an immersion blender or whisk to combine the dressing ingredients.
Toss lettuce, shrimp, avocado and fruit together with dressing and serve.

you have salt listed twice in the dressing ingredients—which amount would be correct?
