Description

Even better than the chicken version, with shrimp, peaches, and avocado. And the best homemade dressing!

Ingredients

  • FOR THE SALAD:
  • 3 cups Green Cabbage Chopped
  • 3 cups Red Cabbage, Chopped
  • 1 cup Jicama, Peeled And Diced
  • 2 cups Yellow Peaches, Chopped (about 2 Large)
  • 1 whole Large Avocado, Chopped, Pit And Peel Removed
  • ⅓ cups Green Onion, Chopped
  • ⅓ cups Cilantro, Chopped
  • ¾ cups Cooked Bay Shrimp
  • 5 whole Wonton Wrappers, Cut Into 1/4 Inch Strips And Lightly Fried
  • FOR THE DRESSING:
  • 3 Tablespoons Rice Wine Vinegar
  • 2 Tablespoons Brown Sugar
  • 3 Tablespoons Ponzu Sauce
  • 1 teaspoon Sriracha
  • 1-½ teaspoon Grated Ginger
  • 2 teaspoons Sesame Oil

Preparation

Add all of the salad ingredients (except the fried wontons) to a bowl, toss to combine. Top with wontons.

Add all of the dressing ingredients to a bowl, stir to combine. Drizzle over the salad. Serve cold.
