Description

Roasted chicken, avocado, toasted almonds, dates, goat cheese, cornbread croutons and tomatoes. A spectacular salad inspired by Hillstone’s Bandera Restaurant.

Ingredients

  • FOR THE SALAD:
  • 6 cups Romaine Lettuce, Chopped
  • 1-½ pound Chicken Breast Shredded
  • 1 whole Avocado, Chopped
  • 4 ounces, weight Goat Cheese Crumbled
  • 2 whole Roma Tomatoes, Sliced Into Wedges
  • ½ cups Roasted Almonds, Chopped
  • 1 cup Corn
  • 16 whole Dates, Sliced
  • 1 cup Cornbread Croutons
  • FOR THE DRESSING:
  • 2 Tablespoons Dijon Mustard
  • 1 whole Lemon, Juiced
  • 1 teaspoon Balsamic Vinegar
  • 2 teaspoons Brown Sugar
  • ½ teaspoons Salt
  • ¼ teaspoons Fresh Black Pepper
  • 2 cloves Garlic, Minced
  • ¼ teaspoons Dried Basil
  • ⅓ teaspoons Dried Oregano
  • ½ cups Olive Oil

Preparation

Combine all salad ingredients in a large bowl.

Whisk together dressing ingredients. Toss with salad.
