This dressing is my favorite thing to whip up when I need to wake up a salad or a sandwich! It is easy to scale up, so I make a bigger batch and keep it in the fridge in a mason jar for my salads all week.
Peel garlic and smash with the side of your knife. Sprinkle with some kosher salt and use a downward pressing and sweeping motion to mash your garlic into a paste.
In a jar with a tight fitting lid, add garlic paste, anchovy paste, vinegar, mustard, salt, and pepper, and shake to combine.
Add olive oil and shake until emulsified.
Drizzle by the tablespoon over a salad or on your bread for a sandwich.
