A salad with no lettuce equals heaven for my man.
Boil the potatoes. Once fork tender, drain the water and allow to cool. Once cooled, cut the potatoes in half and add chicken, tomato, cucumber, and green pepper. Set aside. Combine the olive oil and agave nectar, adding salt to taste. Pour the dressing over the salad, cover, and place in the refrigerator for about thirty minutes to let all of the flavors meld.
Feel free to add a little feta cheese for a deliciously salty, creamy contrast.
