Description

This is a delicious marinade for chicken or beef kabobs. It’s a take off from the recipe typically used at our local fair with my tweaks added for improvements and more flavors.

Ingredients

  • ½ cups Apple Juice
  • ½ cups Peanut Butter
  • ¼ cups Green Onions, Sliced
  • ¼ cups Water
  • 6 Tablespoons Honey
  • 4 Tablespoons White Vinegar (tarragon, White Wine, Cider Or Rice Vinegar Will All Work)
  • 2 Tablespoons Soy Sauce
  • 2 teaspoons Chiles (I've Done Without, It Works Just Fine, Add A Dash Of Cayenne)
  • 2 cloves Garlic, Chopped
  • Cumin, Be Generous
  • 3 pounds Beef Or Chicken; Cubed
  • 1 can Coconut Milk
  • ¼ cups Peanut Butter
  • Cayenne Pepper
  • Chopped Peanuts

Preparation

Combine all ingredients up to, but not including, beef and/or chicken in a glass bowl.

Whisk ingredients together until smooth. This takes a little while, but it will come together, just be patient.

Add beef and/or chicken. Marinate for 2 hours. You can leave it up to 6 hours, but after that the meat will start to get a bit mushy.

Make sure grill is ready using a medium heat. Thread meat unto skewers and place on grill. Watch for flare ups as the marinade drips. Turn skewers often.

Meanwhile, in microwave safe bowl combine coconut milk, 1/4 cup peanut butter and cayenne pepper, whisk smooth, heat in microwave until hot. Top with chopped peanuts.

When meat is done serve with the coconut milk and peanut butter mixture as a dipping sauce.
