I live in Minnesota and when the thermometer dips to -20, I get the urge to heat up the kitchen via my oven! This casserole requires a big scoop of butter, but no soup. Plus, I love wild rice.
Preheat oven to 350 degrees.
Crumble the ground beef into a large skillet and brown. Drain off fat. Transfer the meat to a 3-quart casserole. In the same skillet, adding as little oil as possible, saute the celery, onion, mushrooms and red pepper just until the vegetables begin to soften slightly, about 3 minutes. Combine the vegetables with beef. Add the wild rice and broth to the casserole. Add butter and stir entire contents to combine.
Bake, covered, for 1 1/2 hours, stirring once or twice during baking. Uncover during the last 15 minutes to evaporate any excess liquid and brown the top of the casserole. Cooking times may vary.

In the cooking directions I mentioned that cooking times vary….as much cooking we do, we should all know this! :] Just depends on your oven, etc

Quick suggestion….You have cook time listed as one hour but in the cooking directions it is listed as one and one half….. which is it?

I tried this last night, and it is excellent! I freaked out a little bit while putting it all together because it didn’t call for any seasoning, so I added a little salt and pepper since I used low sodium chicken broth. It turned out fantastic! It’s amazing how flavorful it is just from the mixture of vegetables, ground beef and wildrice. Thank you so much for sharing this recipe, -it’s a keeper.

Super easy! I added some cajun seasoning to taste and it made this meal even more tasty! My husband asked me to add this to my meal list.
