A great Mexican meal that involves alcohol.
Heat a medium sauce pan over medium heat and add 1 Tablespoon of butter. Add onions and saute for about 3-4 minutes; add the chili powder and mushrooms and cook until mushrooms are softened.
Heat a large saucepan over medium heat and drizzle some olive oil on the bottom. Add the fajita meat and cook for 7-10 minutes or until brown all over. In the last 3 minutes add the whiskey.
Now add the chilies to onions and mushrooms and cook for another minute. Add salt, to taste.
Get one tortilla at a time and add 3-4 slices of meat to the tortilla and top with a spoonful of onions, mushrooms, and about a Tablespoon of cheese. Roll up the tortilla very tightly and secure with a toothpick.
Heat a small pan on low-medium heat and add the last Tablespoon of butter. Place the tortilla in the pan and turn after about a minute, heating long enough to lightly brown the tortilla.
Serve with chips and salsa.
