Description

A strange lasagna that I came up with one night out of random ingredients found in the kitchen. The experiment was a success and the husband and kiddo LOVED it. We affectionately call it “Weird Lasagna”. Alas, I forgot to take a picture of it – I will the next time it is made!

Ingredients

  • 16 ounces, fluid Tomato Sauce (1 To 2 Cans)
  • 4 dashes Seasonings You Want To Put In Tomato Sauce (thyme, Oregano, Parsley, Pepper, Salt, Garlic, Etc)
  • 1-½ pound Ground Turkey
  • 1 bag Frozen Soup Veggies (I Used About Half A Bag, Depends On How Veggie-licious You Want It To Be)
  • 9 whole Wheat Lasagna Noodles
  • 1 bag Mexican Mixed Cheese (as Much Or As Little As You Like)

Preparation

1) Put sauce and seasonings in pot. Let them simmer while you do everything else.

2) Pan fry ground turkey (I rinse mine with cold water after cooking, that is totally up to you)

3) Boil lasagna noodles for about 10 min and stir carefully every now and then. A little salt in the water helps to keep from sticking, too.

4) Put veggies in bowl and microwave on high for about 2 min.

5) Put a little of the sauce in bottom of a 9X13 pan, put down three noodles, sprinkle part of the meat on this,then sprinkle on some veggies, pour part of the sauce over this, sprinkle cheese over sauce. Repeat this until the pan is full and all your noodles are used up. On the top layer put remaining sauce and cheese.

6)Cover with foil and put in oven on 350 degrees for about 30 min.

Serves 6 to 8 depending on how big you cut it
