Description

If you want supper on the table in 10 minutes flat, do some early prep work. Cook 3 cups brown basamati rice in 6 cups of water. If you feel like continuing your early prep, go ahead and chop your onions and cube your chicken. You won’t believe how fast this comes together!

Ingredients

  • 6 Tablespoons Cooking Oil
  • 1 pound Raw Chicken, Cut Into Cubes
  • 6 whole Garlic Cloves, Pressed
  • 2 whole Onions, Chopped
  • 2 teaspoons Each Of Salt, Pepper And Sugar
  • 4 Tablespoons Soy Sauce Or More To Taste
  • 6 cups To 8 Cups Cooked Brown Basamati Rice (See Note)
  • 2 cups Frozen Veggies, Like Peas, Carrots Or Beans
  • 2 whole Eggs, Beaten

Preparation

Note: To prepare the rice, cook 3 cups brown basamati rice in 6 cups of water for 45 minutes or until water is absorbed. This step can be done in advance for a quicker supper!

Heat the cooking oil in a large electric skillet. Add the chicken cubes, garlic, onoins, salt, pepper, sugar, and soy sauce. Stir-fry until meat is tender and hot, 2–3 minutes.

Add the cooked rice and stir-fry 5 minutes.

Add the frozen veggies (such as peas, carrots or green beans). Stir well into the rice-meat mixture.

Just before serving, clear an area in the skillet and add the beaten eggs. Heat and stir until eggs are cooked and mixed through.

Serve hot.

this is what i do with my regularly leftover rice. I dont usually add chicken but it is pretty good anyway.
