Healthy turkey burgers get spruced up with zucchini and bell peppers for a bright, tasty dish.
In a large bowl, stir together the chopped onion, garlic, red bell pepper, and green bell pepper. Before adding the zucchini, place the grated zucchini in a double layer of paper towels and squeeze over the sink to remove excess moisture. Add zucchini to the other vegetables. Finally, scrape the rosemary leaves from the stem and chop the leaves finely, adding them to the vegetable mixture as well.
Into the vegetable mixture, add the ground turkey, egg, breadcrumbs, and olive oil, stirring to combine. (At this point, it may be easier to put on some plastic gloves and mix with your hands). Season with salt, pepper, and Sriracha sauce.
Preheat a grill or grill pan to medium heat. Meanwhile, form the turkey-vegetable mixture into 6 equal-sized patties. Once the grill is hot, put the patties onto the grill and cook the patties on one side for 6 to 8 minutes. Flip and cook for an additional 6 to 8 minutes, until there is no pink color inside the burger and the juices run clear.
Serve immediately with your favorite burger toppings.

We must have bought a ground turkey with a higher fat content as our burgers fell apart badly. We left out the zucchini because we were having zucchini as a side. They tasted good, but didn’t look nearly as pretty as yours.
