This marinade is fantastic for grilled veggies, and also great on pork or chicken.
Use a large plastic zip bag and pour in the oil/vinegar/lemon juice.
Mince the garlic, chop the Serrano, then put them both in the mortar and make into a paste.
Add the salt to the past, and then drop the paste into the bag with a spoon.
Veggies taste great soaked in this marinade: whole mushrooms, asparagus, zucchini, red onion, bell peppers, red potatoes and artichoke hearts.
Pork or chicken are also great in this marinade.
