This is a vegetarian kid-friendly, healthy weeknight dinner meal for your family. The name of the meal pretty much explains it all. You can also make it with spinach instead.
Cook pasta according to the package directions.
In a large pot, cook onion and garlic in the olive oil over medium heat for about 5 minutes, until fragrant. Add kale or spinach, and cook until heated through.
Once the kale is cooked, add cheese, milk, garlic powder, salt, and pepper. Continue to cook, stirring constantly, until cheese is melted.
Remove pot from heat. Puree sauce until smooth using an immersion blender.
Add cooked pasta to the kale sauce, and toss to coat. Serve immediately. You may want to top with additional Parmesan cheese.
