Description

Fresh vegetables served over brown rice and topped with a sweet and spicy peanut sauce.

Ingredients

  • FOR THE PEANUT SAUCE:
  • 2 Tablespoons Creamy Organic Or Natural Peanut Butter
  • 2 Tablespoons Rice Vinegar
  • 1 Tablespoon Soy Sauce, Low Sodium
  • 2 teaspoons Sugar
  • ½ teaspoons Red Pepper Flakes
  • 1 Tablespoon Water To Thin Out The Sauce, If Necessary
  • FOR THE STIR-FRY:
  • 1 teaspoon Sesame Oil
  • 1 clove Garlic, Minced
  • ¼ cups Onion, Sliced Thin
  • 1 whole Sweet Bell Pepper, Stem And Seeds Removed Then Thinly Sliced
  • ½ cups Zucchini, Diced
  • 3 whole Radishes, Diced
  • ½ cups Broccoli, Roughly Chopped
  • 2 cups Cabbage, Shredded
  • 2 cups Brown Rice, Cooked

Preparation

In a small bowl, whisk all the ingredients for the peanut sauce together until smooth.

In a large skillet over medium-high heat add sesame oil, garlic and onions. Cook for about 1 minute.

Add bell pepper, zucchini and radishes, cook for about 5 minutes.

Add broccoli and cabbage. Cook for about 2 minutes more then remove the pan from the heat.

Evenly divide the rice, vegetables and peanut sauce over three plates.
