This is what I call a quick pantry dinner. It was so easy and d’lish. I had everything on hand: a partial roll of sausage, frozen sliced pepper, leftover canned tomatoes, and just kind of tossed it all together.
Crumble and saute your sausage until brown. Add in tomatoes, peppers, and rice and cook for about 8–10 minutes. You may need to add a little water if your tomato juice gets all absorbed by the rice. Stir in your cheese and continue to cook additional 8–10 minutes over low heat, or transfer to a baking dish and bake at 350ºF for 10–15 minutes or until the cheese is melted. Either way, it’s yummy!
