I’m talking giant all-beef patty, pepper-jack, mushrooms and fresh guacamole!
For the hamburger patties:
Form ground beef into four half-pound patties; season with salt and pepper. Fry or grill on each side for 4–5 minutes per side, until cooked through.
Meanwhile, in a medium skillet, melt 2 tablespoons butter and add mushrooms, cooking until they just start to brown. Set aside.
For the guacamole:
Peel and seed the avocado (set the seed aside, don’t throw it away). In a medium size bowl, add avocados and lemon juice and mash with a fork until mostly smooth. Stir in remaining ingredients. Place avocado seed in the center and set aside. The seed will keep your guacamole from turning brown. Try it, it works!
When patties are cooked and still hot, top with mushrooms and pepper-jack.
Burger assembly:
Spread rolls with remaining butter and lightly toast. Spread with desired condiments and layer hamburger patty (topped with mushrooms and cheese), guacamole and lettuce and onion if desired.
