Not your traditional “pizza” style stromboli. This dish still combines Italian flavors, but with a lighter filling. This recipe makes 8 individual strombolis or 2 large ones that may be sliced and served. Very kid-friendly! You also can make your own stromboli dough, but for people with time constraints (like me!), the refrigerated dough works amazingly well!! Enjoy!
Preheat oven to 400F.
Mince all vegetables. In a skillet, brown the turkey. Set aside to cool a bit.
In a large bowl, add all veggies, seasonings, mayo, turkey, and 1 cup of the parmesan cheese. Mix until well combined.
Roll out pizza dough into 2 large rectangles, then cut each rectangle into 4 equal parts. Place a large spoonful of mixture on each of the 8 rectangles. Fold dough in thirds overlapping on the top. Pinch ends to seal and crimp with a fork.
Beat egg in a bowl. Use a pastry brush to brush the egg over each of the strombolis. Sprinkle with the remaining 1/4 cup parmesan cheese. Bake for 15 to 20 minutes until golden brown.
Some additions/suggestions that I have done to this recipe:
– Add approximately 1/2 cup chopped mushrooms or black olives.
– Add a drained can of fire roasted tomatoes instead of mayo.
– My kids like this served with ranch dressing as a dip.

This was quite tasty! I halved the recipe (single gal), and used a shallot in place of the onion, some red pepper, and since I didn’t have Italian seasoning, threw in some red chile pepper, oregano and basil. So easy! I’ll definitely make this again. It would be a great lunch with a bowl of soup, which I think I might do tomorrow
