Yummy way to use your Thanksgiving leftovers.
Note: if you have leftover gravy, about 2 1/2 cups, it can be substituted for the white sauce. If you do this, just add dried thyme, meat and vegetables into the heated gravy and proceed with the remaining instructions.
Preheat oven to 400 F.
If you are making your own white sauce: Melt butter in a medium saucepan over medium heat. Add onions and cook until translucent, 2-3 minutes. Whisk flour into butter and onions and cook for an additional 2-3 minutes. Slowly whisk broth into flour until smooth, add thyme, salt and pepper and bring to a slow simmer. Add meat and vegetables. Simmer for 10-15 minutes.
Transfer turkey mixture to a deep-dish pie plate or shallow casserole dish placed on a baking sheet. Spoon warmed mashed potatoes over top, and, using the back of a spoon, make an even layer with the potatoes. Then put the pans into the oven and bake 20-25 minutes, until top is golden brown and filling is bubbly.
