During January Tammie and I are doing some “makeovers” of favorite recipes to make them just a little bit healthier. I substituted ground turkey and reduced the breadcrumbs and found that this “meat” loaf actually tasted better!
Preheat oven to 365 F.
Reserve 8 ounces of the salsa. In a large bowl, mix the remaining ingredients. Make sure they are well combined then put it into a large meatloaf (or standard sized loaf) pan.
Bake at 365 F for 1 hour. Remove it from the oven and top with the remaining salsa. Bake for an additional 20 minutes.
