My tribute to the long forgotten tuna sandwich. Loaded with personality, combined with cannellini beans, mayo, onion, and topped with cheese, leafy greens, and tomato. Delish.
In a medium bowl, stir together the tuna, beans, onion, and garlic. Stir in the mayonnaise. Set aside.
To assemble the sandwiches, spread one side of each bread slice with butter. Spread the plain sides of half of the bread slices with the tuna mixture. Top with tomato slices, greens, and cheese. Place the remaining bread slices on top, butter side up.
Heat a skillet over medium-high. When skillet is very warm, place sandwiches in the skillet (2 at a time, if necessary), cover and cook for 2 minutes. Turn sandwiches over, gently press down with a spatula, and cook for another 1-2 minutes, or until bread is toasted and cheese is melted.

@nursechacha – my husband adds extra salt and pepper to this too. I think it has plenty of flavor without added seasoning, so it’s a matter of taste. I bet some mustard would contribute to a little more zing…I might try that next time. Thanks for the review!

Made with for son and hubby the other night for dinner. It was good but needed a lot more seasoning. I added Penzy’s Sandwich Sprinkle and more salt and pepper. I love cannellini beans but I think I might just use half a can next time. I will probably make it again.
