Mexican casserole that is kid friendly, low fat, and tasty. Always a hit for dinner at my house.
Spray an 8 x 8 pan with non-stick cooking spray. Break 1/2 of the shells on the bottom of the pan. In a skillet, brown the meat and then add other ingredients (except cheese, broth and the remaining 1/2 of the shells). Cook until everything is well heated and the onions are translucent. Spread meat mixture over shells and top with the cheese. Break the rest of the shells on top. Pour 2/3 of the can of broth over all.
Bake 35 minutes @ 350 degrees. The bottom shells soak up the broth and become polenta-like and the top shells get crunchy. Yum!
