Make this “healthified” version of quiche with delicious vine-ripened tomatoes and fresh zucchini!
Preheat oven to 425ºF.
Place cut zucchini in a colander and sprinkle with salt. Let sit for 15 minutes to remove some of the water. In a large bowl, whisk together the eggs and milk. Add the zucchini, onion, salt and pepper, basil, and mix well.
Grease a casserole dish with cooking spray. Place tomato slices to cover the bottom of the dish. Pour 1/4 cup egg mixture over tomato slices. Keep alternating layers until ingredients are done. Evenly sprinkle shredded cheese on the top of the dish before putting in the oven.
Bake for 30 minutes until the center is set and a toothpick comes out clean. Allow to cool slightly before serving. Enjoy!
