An easy meat-free dish.
In a large sauce pan, heat oil over medium high heat. Add onion and garlic, saute until soft and translucent, about 5 to 10 minutes. Add red pepper flakes, salt and pepper to taste. Add lentils, tomato sauce, water, tomato paste, oregano and parsley. Slowly bring to a boil. Once boiling, reduce to medium heat. Simmer uncovered for about 35- 45 minutes or until thick.
Cook ditalini in a large pot of boiling salted water until tender, about 8-10 minutes. Drain ditalini and add to the tomato lentil sauce, toss to coat. Serve and top with parmesan cheese.
