This is the perfect summer recipe. Use up all of your many tomatoes from your garden and taste summer at it’s best!
Slice and spread tomatoes on paper towels to drain. Preheat oven to 350 degrees. After tomatoes are allowed to drain, start layering them in a prepared pie crust (Pioneer Woman’s pie crust recipe is my favorite!) One layer at a time, start with tomatoes and then sprinkle with spices and salt & pepper, filling your pie pan to the top to taste.
Mix cheese and mayonnaise together until creamy. Spoon on top of pie making sure to spread it evenly over the top of the pie. Make sure to seal the top of the pie with the mixture. This is very important to the pie cooking the right way inside.
Bake at 350 for 35 to 40 minutes. Serve with a salad and or pasta on the side. Enjoy!

Yes it goes on top of a crust but the top is the cheese and mayo mixture. I should have listed the crust as an ingredient.

Can you please explain the crust….does this have a top crust as well? I don’t see crust listed as an ingredient.
