Description

Easy, cheesy tomato bake. It doesn’t get much better or easier than this.

Ingredients

  • 3 whole Eggs
  • 1 cup Milk
  • ½ teaspoons Ground Mustard
  • 1 teaspoon Lemon Zest
  • 1 teaspoon Salt
  • 2 pinches Pepper
  • 3 cups Croutons, Store-Bought Or Homemade
  • 1 whole Large Ripe Tomato, Thinly Sliced
  • 4 ounces, weight Crumbled Gorgonzola Or Other Blue Cheese

Preparation

Preheat oven to 350 degrees. Mix together eggs, milk, mustard, zest, and salt and pepper in a bowl.

In a lightly greased pie plate, cover the bottom with croutons. Top with tomato slices, then top with cheese.

Pour the egg mixture over and bake for 30-40 minutes or until eggs are fluffy and set.

This is just delicious, and one of the best parts about it is that it’s so basic that I was able to adjust for the things I didn’t have. Instead of the mustard, I threw in some random horseradish mayo I had in the fridge. I added bacon and some cheddar to the top, served it with a salad, and it was really great! Thank you for the recipe!
