As simple as fresh mozzarella and pesto. My most favorite of all grilled cheese sandwiches!
Preheat your pan over medium low heat. Spread evenly and thinly about a tablespoon of butter per (2) slices of bread. Lay the bread (buttered side down) onto the preheated pan. Layer mozzarella and a tablespoon of pesto. Top with the second slice of bread (buttered side up). Flip when nice and golden and repeat.

I want to do a soup/sandwich lunch for a couple of friends next week. This looks like an easy side for an Italian soup. I need to search around for a perfect soup now. Open to suggestions, Thanks Laurie
