Description

A lovely little dish that can be made with a wide array of refrigerated dough, leftover meats and sauces. The original, Chicken Roll-Ups, came from my mother-in-law. Heaven knows where she found it.

I’ve successfully used this recipe with chicken, left over pot roast, left over meatloaf, shredded bbq pork and more. It’s a little tacky, a little Sandra Lee and no one would call it fine cuisine, but it is rather tasty.

Ingredients

  • 1 can (10.75 Oz.) Cream Of Chicken Soup
  • 1 cup Milk
  • 1 cup Shredded Cheddar Cheese, Divided
  • 1 cup Cooked Chicken, Shredded (Up To 2 Cups, But Increase Cheese Amount Accordingly)
  • 1 package Refrigerated Dough (Crescent Rolls Are Best, But Biscuits, Breads, Pizza Crust And Even Pie Crust Will Work Just Fine!)

Preparation

(I’m demonstrating this with the “Classic” Chicken recipe, but will include some substitution ideas below!)

Preheat oven to 350 degrees. You’ll need a 13″x9″ baking dish.

In a small saucepan, combine soup, milk and 1/2 cup of
cheese. Heat until bubbling, stirring occasionally to combine.

Meanwhile, combine chicken and remainder of cheese.

One crescent triangle at a time, fill with chicken and cheese mixture and roll up. (No need to seal ends or be too tidy about it—any stuffing that falls out can be added into the sauce.)

Pour a little less than half of the soup mixture into the baking dish. Gently place the roll-ups in, giving them a bit of room to expand. Top with the rest of the soup mixture and any extra chicken/cheese.

Bake at 350 degrees for approximately 30 minutes, or until the crescent rolls are done.

Notes:

I use this basic template so much for leftovers, my husband is, frankly, a little sick of them.

Other possible combinations:

1. shredded BBQ pork, BBQ sauce, and sharp cheddar
2. pot roast and beef gravy
3. taco meat, enchilada sauce, and cheese (but just on top, not in the sauce)
4. ground beef, marinara sauce, and mozzarella or Parmesan cheese
5. ground beef or crumbled meatloaf with a little ketchup, and cheddar cheese soup

You won’t always need the milk or another thinner for your sauce. It will depend on what you’re using.

I’m sure that all manner of vegetables would be a delightful addition to the meat mixture, but I wouldn’t know, as I cook for a very picky household.
