Description

Tilapia and potatoes make for a simple but delicious dinner.

Ingredients

  • 2 pieces Parchment Paper
  • 4 pieces Tilapia
  • 6 Tablespoons Butter
  • 2 pinches Pepper
  • 2 pinches Salt
  • 2 whole Large Yukon Gold Potatoes
  • 1 whole Lemon, Sliced Thin
  • 1 Tablespoon Chives
  • 1 teaspoon Garlic Powder
  • 1 Tablespoon Parsley
  • 1 teaspoon Lemon Pepper Seasoning

Preparation

Start by slicing your potatoes in thin slices. Put them in a pot of water and bring to a boil. After 4-5 minutes, drain the potatoes and rinse with cold water to cool them down. Now you are going to put the pouch together.

Take a piece of parchment paper and put a good layer of potatoes, then top it with a couple pats of butter. Sprinkle with chives and garlic powder. Next, put 2 pieces of tilapia on top of the potatoes. Sprinkle with lemon pepper seasoning, salt, pepper and parsley and top with 3 slices of lemon. You can also put another pat or 2 of butter on top of your fish if you like a lot and aren’t worrying about calories. I like to take the leftover lemon and squeeze the juice on top.

Fold the pouch up and seal it by folding the paper down. Put in the oven at 450 degrees for 12-15 minutes.

Loved this recipe…It was moist and very flavorful. I didn’t have the Lemon Pepper so I used Old Bay Garlic & Herb. We especially loved the potatoes; wouldn’t normally think to do that so thanks for a great idea/recipe!

I agree this recipe was super easy and phenomenal! I left out the chives (because I didn’t have any) and I only made half of the recipe. The fish was delicious, tasty, moist, and perfect!

I did, however, have a bit of a hard time trying to figure out how to fold the parchment paper to seal it properly since my piece was ever so slightly small. Also, I had to bake it about 17 minutes. I’ve been suspecting that I need to check to see if my oven’s thermometer is accurate…

This recipe whas phenomenal! The only changes that I made were to cut down on the butter and seasonings just a tad.

I have made this on several occasions…it is a go-to recipe in our house…simple, delish, healthy, and easy clean-up. The potatoes works so well in this dish! Give it a try, you won’t be disappointed :-)
