Taco Pasta – combining the best of both worlds… Mexican and Italian! Created in my kitchen one night when we were too tired to go out and didn’t have all of the ingredients to any one meal in the pantry. This meal is simple, cheap, easy, and a crowd pleaser!
Put pasta on to boil according to ‘al dente’ instructions. (I recommend using a smaller shape – rotini, bowtie, farfalle, etc.).
While pasta is cooking, brown ground beef. When beef is browned, add the taco seasoning and prepare according to instructions on package.
When the pasta is done, drain and return to pot.
Add taco meat, salsa and cheese to the pasta and stir to combine. Feel free to use ‘mild’ or ‘hot’ salsa if you’d like! I recommend using your favorite salsa, but if you don’t have one, try Pace if your grocery store has it!

Made this tonight – very easy and quick. I’m on a cilantro kick so also added a bit of chopped fresh cilantro and some chopped sauted onions, for a little extra “something”.

I’ve made this myself. It works great for a busy night. It is a very kid friendly meal. Even taste good the next day.
