Spaghetti with a rich but easy sauce made from spinach, basil, onions, mild and garlic. Traditionally in Peru, this is eaten with a nice steak, after eating Papa a la Huancaína.
Chop the garlic and the onion and cook for 3 minutes. Then add chopped spinach and basil and cook for another 3 minutes. Add salt and pepper.
When finished, place in blender and add the milk. Blend for a minute, or until smooth.
Cook and drain the spaghetti.
Serve with the sauce. You can add Parmesan cheese.

I tried this recipe and it is wonderful. My husband from Lima Peru loved it. It is very good … and I recommend it to anyone who would like to try Peruvian food. It is similar to a Pesto sauce however it is creamier and “lighter”.

Thank you so much for adding this recipe to this site. My husband is from Lima and I have searched high and lo online to find a recipe for this “green spaghetti”. I have a homegrown basil and will give this a try this weekend!
