A friend gave me a recipe for something she called Jumbo Cornburger. We messed with it a little at home and came up with this. It’s very comforting, silly, 70’s good.
1. Preheat oven to 375 degrees.
2. Spray pie plate.
3. In a bowl, beat eggs with tomato sauce, Worcestershire sauce, hot sauce, and taco seasoning. Salt and pepper to taste. Mix in meat.
4. In a separate bowl, mix corn, onion, jalapenos, pimentos, crumbs, cumin, salt and pepper.
5. Place 1/2 of meat mixture in the pie pan and pat to flatten and cover the bottom of the dish. Top with corn mixture. Finish off with second 1/2 of meat mixture, smoothing to cover the corn and seal the pie.
6. Cook in oven for 50 minutes. Remove from oven, layer with tomato slices, top with cheese, and return to oven for an additional 5 minutes. Serve hot or at room temperature.
