I made this for a superbowl party and then it became a yearly request! It travels well and only needs to warm back up in the oven to be truly tasty.
Prepare pasta according to instructions on the box. Warm oven up to 350˚F.
Melt butter in saucepan at a low temperature. (You will need to use a saucepan large enough to hold about 4 cups of sauce.)
Add the milk and slowly warm up.
Slowly add the mixture of asiago, fontina, mozzarella, and parmesan cheese. Use a whisk to combine. (I’ve found that it helps to slowly stir in the cheese.)
Once the white cheeses are in, slowly add the cheddar. You may not use all 2 cups, but add until the consistency is nice and creamy. Add Old Bay (or your favorite seasoning) at this time. Keep warm while waiting for the pasta.
Drain pasta and empty to a large bowl. Combine the cheese and pasta and put it in a 9×13 casserole dish.
Cover with breadcrumbs (if you choose, you can melt some butter and pour it over the breadcrumbs to keep from burning them).
Bake for 30 minutes and enjoy!
(I’ve taken this elsewhere and it’s excellent even after warming up in the over for 10 minutes.)
